Ingredients
1 cup I Can't Believe It's Not Butter!® Mediterranean Blend spread, melted
2 Tbsp. lemon juice
2 Tbsp. finely chopped fresh parsley
1/4 cup grated Parmesan cheese
4 artichokes (about 2 lbs.), trimmed and steamed
Instructions

Combine all ingredients except artichokes in small bowl. Serve dip with cooked artichokes.

HOW TO PREPARE ARTICHOKES FOR COOKING: Wash artichokes in cold water; drain. Cut stem close to base with a large knife, then cut off 1/2-inch of top. Remove tough lower leaves or discolored leaves. If desired, with scissors, cut off sharp leaf tips.
